Dwayne’s Favorite Fall Casserole

The best way to say thank you is with a cozy casserole. 

Everyone that contributed to the mission of Habitat for Humanity of Greater Memphis has made affordable homeownership more equitable in the 901. Every volunteer hour, every dollar, and every item donated has built wealth for families, neighborhoods, and communities in underserved areas. Enjoy this dish with your family - knowing you’ve provided strength, stability, and self-reliance through shelter with Memphis Habitat.

Ingredients 

2 medium yellow squash
2 medium zucchini
24 oz cauliflower
1 cup chopped onion
8 oz Baby Bella mushrooms
8 oz sharp cheddar cheese, shredded
½ cup mayo (Miracle Whip if preferred)
1 cup low-fat sour cream
½ cup grated Parmesan cheese
1 tsp garlic salt
1 tsp pepper
1 tsp oregano
1 tsp cumin
½ tsp cayenne pepper
1 tsp paprika
½ tsp red pepper flakes
2 lightly beaten eggs
Half a stick of butter

(All seasoning proportions are simply suggestions and should be allocated to taste based on personal preference.)

Step 1: Preheat oven to 350 ºF.

Step 2: Chop cauliflower into medium-sized pieces. Coat with olive oil—season with garlic powder, paprika, cumin, cayenne, salt and pepper. Place on a greased baking sheet and bake for 15-20 minutes or until golden brown.

Step 3: Dice onion and garlic and saute in butter or olive oil until tender.

Step 4: Dice squash, zucchini, and mushrooms into bite-sized pieces. Add to the onion and garlic mixture and continue to cook until tender. Season with garlic salt, pepper, red pepper flakes, and oregano until the preferred taste is achieved.

Step 5: Combine all the ingredients and seasonings listed above into a mixing bowl. Add both cheeses, sour cream, mayo, and eggs. Mix well.

Step 6: Add the mixture to a greased baking dish and cook for 40 minutes.

Step 7: Remove the casserole from the oven and crumble 2 sleeves of Townhouse crackers on top. Drizzle with butter as preferred.

Step 8: Return the casserole to the oven and broil for 2-3 minutes or until the topping is golden brown.

Step 9: Remove the casserole from the oven. Let sit for 7-10 minutes. Grab a fork and dig in!

I wanted to share this dish to show how thankful we are for your continued generosity and support for Habitat for Humanity of Greater Memphis. Your dedication has helped our team increase wealth and open doors that were once closed for hundreds across the 901. 

This recipe was discovered when I decided to eat more veggies and less meat last December. After a few tries on my own and then reviewing a few similar recipes online–I settled on this one–granted ratios and portions are never the same.

I’m terrible at providing exact portions when someone asks me about a dish I made. I grew up in a household where we just seasoned on a whim. My grandmother used to own one of those old Betty Crocker recipe card libraries in the avocado-colored container. Every so often she’d review a recipe and attempt to make it–but she almost always added a twist to it, making it her own.

So now for me–being the adventurer in spirit I am–I dabble in the kitchen making any and everything with little to no real instruction, rhyme or reason. So it’s pretty funny that I’m sharing a recipe with specifics! I guarantee that the next time I make this dish–I’ll give it yet another twist! (I can’t help myself)!
